Delicious Inside Out Bacon Cheeseburgers

With most burgers it's all about the toppings but here we put the cheese and the bacon inside the burger so you get quite a surprise when you bite into this delicious cheeseburger. These are large cheeseburgers. Each burger is eight ounces and you put the bacon and the cheese inside the burgers before you cook the burgers.

Ingredients Needed For Your Inside Out Bacon Cheeseburgers

1. Two Pound Ground Beef.

2. Eight Slices Bacon Cooked Crisp.

3. Four Slices Cheddar Cheese.

4. Four Hamburger Buns Toasted Golden Brown.

5. Four Lettuce Leafs.

6. Four Slices Tomato.

7. Four Large Slices Sweet Red Or Purple Onion.

Put two slices of crisp cooked bacon and a slice of cheddar cheese inside each eight ounce burger. I usually make a four ounce burger and then I make a depression in it and then I put the bacon and cheese in that depression and then I put a burger over that and seal the edges so the bacon and cheese are inside the burger.

I always cook my bacon crisp and I start my burgers cooking on a grill on medium heat so the burgers will cook slow and the cheese will melt inside the burger. I usually crumble my bacon up for the best results.

I cook my burgers until I know they are done and then I put my burgers together. Be sure that you tell people that the cheese inside the burgers will be hot when they bite into it. I spread garlic butter on my buns before I grill them golden brown on the grill.

I then put my Inside Out Bacon Cheeseburgers together with the bottom bun first, then the burger and then the lettuce, tomato, and onion. I offer mayonnaise, ketchup, and mustard on the side so people can add what they want to their burgers.

I promise you that you'll have a cheeseburger that everyone will love. When I'm making my meat up I add salt, pepper, and and a little Worcestershire sauce to the meat for added flavor.

Delicious Homemade Salsa

How To Make Delicious Homemade Salsa

You can buy all the salsa you want to out of the grocery store but your never going to purchase anything as good as a good delicious homemade salsa. I know you'll see recipes calling for you to use canned tomatoes but I never do. I purchase the freshest tomatoes I can from the grocery store and chop them for my homemade salsa. When I can find them I use fresh plum tomatoes or cherry tomatoes because I think they have a lot more flavor especially in the winter months.

You need to use green onions including the tops, fresh cilantro, and fresh minced garlic.I use the little four ounce cans of green chili's but I also use a few fresh jalapeno peppers. You should keep in mind that the more fresh jalapeno peppers you use the hotter your homemade salsa will be.

Ingredients Needed For Your Homemade Salsa

1. Two Cups Fresh Fine Diced Tomatoes.

2. One Cup Fresh Green Onions Including Tops Diced Fine.

3. One Bunch Fresh Cilantro Diced Fine.

4. Two - Four Jalapenos With Stems Removed And Diced Fine.

5. One Tablespoon Minced Fresh Garlic.

6. One Four Ounce Can Green Chili's.

7. One Level Teaspoon Ground Sea Salt.

8. One Teaspoon Fresh Lime Juice.

9. One Teaspoon Fresh Grated Lime Zest.

Instructions For Making Your Homemade Salsa

You want to chop your tomatoes, jalapenos, and green onions including the tops very fine. Have everything about the same size and your salsa will turn out perfect.

Mix everything together in a large plastic container with a lid so you can put the prepared salsa in the refrigerator for at least 12 hours before you serve or use your homemade salsa.

Salsa usually refers to a Mexican sauce made from tomatoes flavored with cilantro, chilies, and onions. But you'll find that some Chefs have started thinking outside the box and they are making salsa out of mango, fruits, vegetables, and even beans. If you can come up with a flavor combination you like there's no reason you can't call it salsa. So why not do some out of the box thinking and see what you can come up with. I think you'll find that sea salt will give you a lot more flavor in almost any salsa recipe.

7 Up Biscuits, The Best Biscuits Ever

7 Up Biscuits, Quite Possibly The Best Homemade Biscuits In The World

Guess what? Anyone and yes I mean anyone should now be able to make biscuits and they are truly some of the best biscuits you'll ever eat in your life. Now that's saying something isn't it. Well read on and lets make biscuits.

7 Up Biscuits Ingredients

1. Two Cups Bisquick Baking Mix.

2. One Half Cup Sour Cream.

3. One Half Cup Seven Up.

4. One Fourth Cup Melted Butter.

5. One Half Cup Self Rising Flour For Dusting Surface.

Instructions For Making 7 Up Biscuits

I use the metal blade in my food processor and I add the Bisquick Mix first, then the sour cream,and then the 7 Up. I pulse the food processor to mix my dough. When the dough is well mixed I flour a surface with the self rising flour and then I turn my 7 Up Biscuit dough out onto the floured surface and pat the dough out to about one half inch thick.

I turn my oven onto 350 degrees and let it heat up. I use a brush and I brush a baking pan with some of the melted butter.

I use my biscuit cutter to cut out my biscuits and put them onto the prepared baking pan. Your dough will be soft so work carefully with it.

Now put your pan of biscuits into the oven and bake for 10 - 12 minutes until the biscuits are golden brown. When they are done remove them from the oven and brush them with more of your melted butter. You won't believe how delicious these biscuits are until you make them.

Double The Recipe

If you need to then by all means double the recipe. I promise you that all the biscuits will get eaten quickly. I serve the biscuits with homemade honey butter and people eat them quickly.

Note About 7 Up

If 7 Up is not available in your area use Sierra Mist as it will work just as well.

Some Biscuit Tips And Information

If you like biscuits with crusty sides, place them one inch apart on a shiny baking sheet. For soft sides, arrange them close together in a shallow baking dish or pan.

Wrap left over biscuits in foil, place in a plastic zip lock bag, and freeze for up to three months. To serve, thaw and heat foil wrapped biscuits in a 300 degree oven for several minutes or until heated.

I've found that sticky, slightly wet dough makes the best biscuits. I keep the damp dough from sticking to my hands by kneading with a metal dough scraper. The scraper lets me lift the dough and fold it over on a floured surface. Once it becomes less sticky I knead it by hand.

Lighter Than Air Buttermilk Biscuits

1. One Third Cup Butter Cut Up In Very Small Pieces.

2. Two Cups Self Rising Flour.

3. Three Fourths Cup Buttermilk.

4. Melted Butter.

Instructions For Making Your Biscuits

Cut the one third cup of butter into the flour until the flour is crumbly. Add the buttermilk stirring until the mixture is moistened.

Turn the dough out onto a lightly floured surface and knead three to four times.

Roll or pat your dough out to a thickness of three fourths of a inch and then cut your biscuits out with a biscuit cutter and place the cut out biscuits onto a baking pan that you have brushed with melted butter.

Bake at 425 degrees for 12 to 14 minutes Brush the baked biscuits with melted butter. These biscuits are also delicious. My family and me have made them this way for over a hundred years and so can you.

World's Best Oven Baked Meat Balls

I like to put them into spaghetti sauce and then serve them on a toasted loaf of Italian Bread for a delicious meatball sub sandwich. Pour your apple mixture into a lightly greased baking dish. Now you will want to bake uncovered at 275 degrees for two hours. Stir about every thirty minutes.

Let it cool and you'll have wonderful apple butter.

Applesauce

Applesauce is a mixture of apples, sugar, and sometimes spices cooked to a smooth or chunky puree. When making applesauce, select tart, juicy all purpose apples. Granny Smith apples make excellent applesauce. If you want to end up with chunky applesauce, add the sugar after the apples are cooked. Adding the sugar after the apples and mashing it all with a potato masher yields a smoother apple sauce.

For a simple fat substitute in baked goods, use applesauce measure for measure to replace the oil in your recipe.

Granny Smith Apple Pie

1. One And One Half Packages Refrigerated Pie Crusts.

2. Six Medium Granny Smith Apples Peeled, Cored And Diced.

3. One And One Half Tablespoons Lemon Juice.

4. Three Fourths Cup Light Brown Sugar.

5. One Half Cup White Granulated Sugar.

6. One Third Cup All Purpose Flour.

7. One Teaspoon Ground Cinnamon.

8. One Level Teaspoon Nutmeg.

Instructions For Making Your Granny Smith Apple Pie.

Put your full pie crust into a pie pan that you have sprayed with vegetable cooking spray. Cut slits into the bottom of the pie dough.

Toss together your apples and lemon juice in a large bowl. Combine your brown sugar and remaining four ingredients and sprinkle over the apple mixture. Then toss to coat well.

Pour into the prepared pie crust.

Roll out the remaining pie crust and place over the filling in the pie pan. Fold the edges under and crimp. Cut slits in the top for steam to escape.

Bake at 450 degrees for 15 minutes. Then reduce the oven temperature to 350 degrees and bake for 35 more minutes. Remove from the oven and allow it to cool. You'll have a wonderful apple pie that will be just perfect served with a scoop of vanilla ice cream.

Double Crunch Honey Garlic Pork Chops

My family has been making these delicious chicken fried pork chops for at least 50 - 60 years. I know I've cooked probably a million or more chicken fried pork chops and with homemade mashed potatoes, gravy, and homemade biscuits you have a meal you won't soon get over.

Double Crunch Honey Garlic Pork Chops

If you look at the photo above and your mouth starts to water then you need to read on about this oh so wonderful way to make chicken fried pork chops.

I suggest starting with six center cut loin bone in pork chops. Let me tell you the pork chops with the bone in them will always taste better than boneless pork chops. Yes the flavor is so much better with the bone in pork chops.

Ingredients For Your Pork Chops

You will want to get started by sifting together the below ingredients.

1. One Cup All Purpose Plain Flour.

2. One Teaspoon Ground Sea Salt.

3. One Teaspoon Ground Ginger.

4. One Teaspoon Ground Nutmeg.

5. One Teaspoon Ground Thyme.

6. One Teaspoon Ground Sage.

7. One Teaspoon Ground Cayenne Pepper.

Sift the above ingredients together very well and put all your sifted together ingredients into a large bowl.

Now mix together four large eggs and a cup of milk. Whip it together very well.

Heat a couple of inches of vegetable oil in a large skillet until the oil is hot but not smoking. You want your oil hot enough to brown your pork chops but not burn them. I suggest using a heavy skillet so your pork chops will not burn easily.

Put your pork chops first in the milk and egg mixture and then into the flour mixture. Now they go back into the milk and egg mixture and then back into the flour mixture. They are going to be double breaded. Be sure they get very well breaded before you fry them in the hot vegetable oil. Fry them on one side until they are good and brown and then flip them over and brown them to done on the other side.

Make the below Honey Garlic Sauce and dip your cooked pork chops into the prepared Honey Garlic Sauce.

Ingredients For Honey Garlic Sauce

1. One Cup Soy Sauce.

2. One Tablespoon Minced Fresh Garlic.

3. One Cup Honey.

Mix the ingredients for the Honey Garlic Sauce in your blender and then cook it in a sauce pan until almost boiling and then remove from the heat. When your pork chops are fried dip them into the Honey Garlic Sauce and then place on a serving dish.

I guarantee you that you'll have some of the best pork chops you'll ever eat in your life. Yes they really are that good. The flavor is just perfect. Give these delicious pork chops a try and see what you think.

Rosemary Rubbed Pork Chops

I use large thick pork chops for this recipe and I use bone in pork chops because they have much more flavor than boneless pork chops.

Ingredients Needed For Your Rosemary Rubbed Pork Chops

1. Two Teaspoons Olive Oil For The Pan.

2. One Tablespoon Dry Crumbled Rosemary.

3. One Tablespoon Brown Sugar.

4. One Teaspoon Ground Cumin.

5. One Teaspoon Ground Sea Salt.

6. One Teaspoon Black Pepper.

Place your pork chops onto a flat surface and then sprinkle them well on both sides with all your ingredients above. Rub the spices and brown sugar into the pork chops.

You will want to put the olive oil into a baking dish and then put your prepared pork chops into the prepared baking dish and cook for about forty five minutes at 350 degrees until your pork chops reach and internal temperature of 160 degrees.

If your pork chops start to get too brown put tinfoil over the pan. Serve your rosemary rubbed pork chops on a bed of cooked sweet potatoes for a delicious meal.

My World Famous 7 Up Pound Cake Recipe

My Grandmother was the first one that I knew of that made this oh so wonderful pound cake. 7 Up was a very popular drink in the Charlotte area where I grew up as a kid. I remember those first 7 Up Pound Cakes that I ever got to taste.

My Grandmother Hattie made those first 7 Up Pound Cakes in round tube cake pans. I remember that we sold slices of plastic wrapped 7 Up Pound Cake for 50 cents a slice and people were happy to get it. If they came in and there was no 7 Up Pound Cake they were some disappointed shoppers.

My Grandmother made homemade cakes and pies all day every Friday and Saturday and by late Tuesday or Wednesday all of the cake and pies in the store were gone.

Seven Up Pound Cake Recipe

This is my secret recipe for 7 Up Pound Cake that I've been working on for about forty years.

7 Up Pound Cake Ingredients

1. Three Cups All Purpose Flour.

2. One Cup Butter Softened To Room Temperature.

3. Five Large Eggs At Room Temperature.

4. One Teaspoon Ground Sea Salt.

5. One Teaspoon Almond Extract.

6. One Teaspoon Vanilla Extract.

7. One Half Cup Crisco Shortening.

8. One Cup 7 Up Soft Drink.

For Your Glaze You Will Need

1. One Fourth Cup 7 Up Soft Drink.

2. One Half Cup White Granulated Sugar.

Pre-heat your oven to 300 degrees and grease and flour a 10 inch tube cake pan.

You'll want to combine your shortening, butter, sugar, vanilla and almond extract in a large mixing bowl with an electric hand mixer. You'll want to beat the mixture until it's light and fluffy. At this point you'll want to beat your large eggs in one at a time. Be sure to beat all your eggs in well so that every thing gets very well mixed together.

You want to combine your flour and salt in a separate bowl and then add to your wet ingredients. Now you'll want to beat in one cup of the 7 Up. Be sure that all your ingredients get very well mixed together.

You'll want to spray the inside of a 10 inch tube cake pan with vegetable cooking spray and then put a tablespoon of flour in the pan and shake it around very well to coat the inside of the tube cake pan. Turn the pan upside down over a trash can or sink and tap out the extra flour.

Pour your mixed up 7 Up Pound Cake batter into the prepared tube cake pan allowing enough room for the cake to bake and expand. You'll want to bake for one hour and thirty minutes until a cake tester inserted into the cake in the center comes out clean.

Cool in the pan for 10 minutes and then invert on a tray or plate and take the baked 7 Up Pound Cake out of the pan. Let the cake cool while you make the frosting.

While the cake is cooling make the frosting by combining one fourth cup of 7 Up with one half cup of sugar in a sauce pan. Bring to a boil and boil 1 - 2 minutes until the sugar is completely dissolved. Take a fork and stick holes gently down into your cake. Pour and spread the frosting over the cakes top and sides and allow it to cool. You'll end up with a oh so delicious pound cake that will have your family and friends begging for more and more.

You can if you wish serve this cake topped with strawberries, raspberries, or blueberries. Or your favorite berry or even peaches. I promise you this cake will be delicious with any fruit or berry. Give it a try and see what you think.

Now that's quite a statement isn't it. Yes it is. But guess what? This will be the best pound cake you'll ever taste in your life. And if you make this pound cake for your family and friends they are going to be wondering. Now how in the world did he or she make a pound cake this wonderful.

Instructions

Blend all ingredients in a large bowl, then beat at medium speed for 2 minutes. Bake in a greased and floured 10 inch tube pan at 350 degrees for about 45-55 minutes, until center springs back when lightly touched. Cool right side up for about 25 minutes, then remove from pan.

Blend 1 cup powdered sugar with either 2 tablespoons of milk or 2 tablespoons of lemon juice and then drizzle over cake.

I like to add a teaspoon of lemon zest to my pound cake topping. Be sure to get your lemon zest chopped up very fine. Use fresh squeezed lemon juice so your flavors will be just perfect.

Margarita Shrimp Recipe

This recipe for Margarita Shrimp is oh so delicious. Look at the photo and you can see how wonderful and delicious this shrimp is.

PICO DE GALLO COCKTAIL SAUCE

1/2 cup Cilantro; - chopped fine

1 medium Serrano pepper; stem, seed & mince

2 medium Tomatoes; -diced fine

1 small Onion; - small dice

2 ounces Lime juice

8 ounces Ketchup

1/2 tablespoon Worcestershire Sauce

1/2 teaspoon Sea Salt

1/8 teaspoon Hot sauce; as required

MARGARITA SHRIMP

2 ounces Canola oil

2 cloves Garlic

2 medium Shallots; - diced fine

1 medium Jalapeno; - stem removed & seeded

1 bunch Cilantro

4 ounces Lime juice

2 ounces Tequila

2 pounds shrimp; 16/20 count, shelled & deveined

Margarita Shrimp Preparation

Pico de Gallo cocktail sauce

Combine all ingredients in a medium bowl. Fold together. Cover and refrigerate until needed.

MARGARITA SHRIMP: In blender, add in canola oil, garlic, shallots, jalapeno, cilantro, lime juice and tequila. Blend into a smooth puree. In the refrigerator, marinate shrimp in a large bowl in puree for 1 hour.

Grill over an open flame or in a grill pan or saute in 1 tablespoon oil.

Serve shrimp warm with Pico De Gallo Cocktail Sauce.

This loaf is the perfect size for two people to enjoy a couple of slices soon after it comes out of the oven, and then again later.

Banana Bread Ingredients

1. One Half Cup All Purpose Flour.

2. Three Tablespoons Sugar.

3. One Teaspoon Baking Powder.

4. One Teaspoon Baking Soda.

5. One Half Teaspoon Ground Sea Salt.

6. One Fourth Cup Sour Cream.

7. One Fourth Cup Mashed Ripe Bananas.

8. One Teaspoon Vegetable Oil.

9. One Teaspoon Vanilla Extract.

10. One Large Well Beaten Egg White.

11. Vegetable Cooking Oil.

Start by pre-heating your oven to 350 degrees.

Combine the first five ingredients in a medium bowl and make a well in the middle of the mixture. Combine sour cream and next four ingredients and stir well. Add to flour mixture. Stir just until moist.

Spoon batter into 6"X3"X2" loaf pan coated with vegetable cooking spray.

Bake at 350 degrees for 35 minutes or until a wooden toothpick comes out clean when inserted in the center of the loaf.

Let cool in the pan for 10 minutes. Remove from the pan and let it cool on a plate or wire rack.

Twice-Baked Potatoes in a Dish and Potato Skins

Twice-Baked Potatoes in a Dish and Potato Skins

9 medium russet potatoes

4 ounces cream cheese

1/2 cup sour cream

4 tablespoons butter

3 cloves garlic, finely chopped

1/2 to 3/4 teaspoon salt

1/4 teaspoon pepper

1/4 to 1/2 cup milk (if potatoes are too thick)

1 jar bacon bits, or a half pound of bacon, fried and cut into bits, or cut into bits and fried

2 1/2 to 3 cups shredded cheddar cheese

canola oil to fry in

sour cream, if desired

3 green onions, sliced

Preheat oven to 350° Fahrenheit. Scrub and pierce potatoes several times with a sharp knife. Bake potatoes at 350° for about an hour, or until potatoes give when squeezed gently with an oven-mitted hand.

When potatoes are done, cut in half and carefully scoop out insides, leaving about a 1/4-inch layer of potato inside. Set skins aside.

For the Twice Baked Potatoes in a Dish:

Place potato insides in a large bowl or the bowl of a standing mixer. Mix briefly to break potatoes down a little. Add cream cheese, sour cream, butter, chopped garlic, and about 1/2 teaspoon salt and 1/4 teaspoon or so of pepper. Beat until thoroughly mixed, but don't mix to the point of gumminess. If the mixture seems really thick, add up to 1/2 cup milk to smooth it out to the consistency of mashed potatoes. Spray a large casserole dish with non-stick cooking spray. Spread potato mixture into the prepared pan.

Cover with foil and bake for 40 minutes at 325°. Immediately after removing from oven, cover the top with 1 cup of cheese. Then sprinkle with about 2/3 of the bacon. Allow to sit for about 10-15 minutes before serving. The heat from the potatoes will melt the cheese perfectly. Makes about 9-10 servings.

For the Potato Skins:

After scooping out potato insides, you should have 18 half skins. Cut each of those in half, so you have quarter skins. Heat about 2 inches of canola oil in a pan (about 325°). Fry potato skins in batches, careful not to crowd the pan. Once skins are a deep golden brown, remove to a paper towel-lined cooking rack to drain. Place fried skins, open side up, on a baking sheet. Sprinkle each with cheese and a little bacon. Place in 325° oven for about 5- 10 minutes, or until cheese is melted. Top with sour cream and green onions, if desired.

Makes about 9 servings.

3 tbsp Chili powder

1 tbsp Garlic powder

SPICY SOUTHWESTERN DRESSING

1 tbsp Vegetable oil

4 4-oz breastschicken thighs, skinned and boned

1/2 cup sweet red pepper, Chopped

1 tbsp Tex-Mex Spice Mix

1 tbsp Salt

4 10-inch diameter flour tortillas

TEXMEX SPICE MIX

Spicy southwestern dressing

2 cups bibb lettuce; Shredded

2 tbsp Ground cumin

2 tbsp Water

1 cup mango Chopped

1 tbsp Fresh Cilantro chopped

Vegetable cooking spray

1/2 cup Green Pepper Chopped

1/2 cjicama Chopped

1 1/2 teaspoon Ground red pepper

1 tbsp Black Pepper ground

1 teaspoon Sugar

1 tbsp Tex-Mex spice mix

2 tbsp Lime juice

Chicken Taco Salad Preparation

Coat chicken with Tex-Mex Spice Mix. Cover and chill 8 hours. Cook chicken in a large nonstick skillet coated with cooking spray over medium heat 4-5 mins on each side. Chill. Chop chicken and place in a medium bowl. Add mango and next 4 ingredients; toss with Spicy Southwestern Dressing.

Place each tortilla in a medium-size microwave-safe bowl. Microwave at high 1.5 mins or until crisp. Place lettuce into tortilla shells and top with chicken mixture. To make Tex-Mex spice mix: Combine all spice mix ingredients thoroughly and store mixture in a sealed container in a cool, dark, dry place up to 3 months. Yields 8.5 tablespoons. TO MAKE SPICY SOUTHWESTERN DRESSING: Combine all dressing ingredients. Yeilds 6 tablespoons.

Apple Praline Pie Recipe

Here is one of the best recipes for apple praline pie that you'll ever find. It's a wonderful pie that is oh so delicious and yummy. It's also easy to make and any average cook should be able to produce this oh so wonderful pie.

1 package refrigerated piecrusts -- (15-ounce)

6 Granny Smith apples -- peeled, cored, and -- sliced

1 teaspoon grated lemon rind

1/3 cup plus 3 tablespoons light corn syrup -- divided

1/4 cup plus 1 tablespoon butter -- melted and divided

3 tablespoons sugar

1/4 cup all-purpose flour -- divided

1 teaspoon apple pie spice

1/2 cup firmly packed light brown sugar

1/3 cup chopped pecans or walnuts

Fit 1 piecrust into a 9-inch pieplate according to package directions. Arrange apple slices in piecrust, and sprinkle with lemon rind. Set aside.

Combine1/3 cup corn syrup, 2 tablespoons butter, 3 tablespoons sugar, 2 tablespoons flour, and apple pie spice. Pour over apple slices. Combine remaining 3 tablespoons corn syrup, remaining 3 tablespoons butter, remaining 2 tablespoons flour, brown sugar, and pecans. Spoon 1/3 cup mixture over apple slices. Unfold remaining piecrust. Cut 2 to 3 desired shapes from center, using a cookie cutter. Reserve cutouts.

Place piecrust over filling.

Fold edges under, and crimp. Brush cutouts with water, and attach to top of pie. Place on a baking sheet. Bake at 425ø for 25 minutes; remove from oven, and dollop with remaining brown sugar mixture. Reduce heat to 350 degrees, and bake 10 more minutes. Cool completely. Makes 1 (9-inch) pie.

All Day Crock Pot Delight, Delicious Beef Stew

If your looking for a really delicious beef stew then here it is. What I do is use a lean boneless chuck roast for this recipe and it's oh so delicious. You want your pieces of chuck roast to be about one inch cubes for the best results. You also want to trim away the extra fat.

1. Two to Three Pounds Of Chuck Roast Cut Into One Inch Cubes.

2. One Cup Flour.

3. One Teaspoon Ground Sea Salt.

4. One Teaspoon Ground Black Pepper.

5. One Teaspoon Ground Garlic Powder.

You want to mix together the flour, salt, pepper, and garlic and then coat the chuck roast cubes with the flour mixture.

In a little vegetable oil brown your chuck roast cubes on all sides.

Once you have all your chuck roast cubes browned pour them and the drippings out into a crock pot or slow cooker and then add the below ingredients to the slow cooker or crock pot.

1. One Cup Fine Chopped Sweet Onion.

2. Three Cups Peeled Potatoes Cut In Very Small Cubes.

3. One Cup Red Wine.

4. Three Cups Beef Broth.

Put everything in the crock pot and turn it on high for eight hours. Keep the lid on the crock pot or slow cooker and cook until the meat and vegetables are tender. You can if you wish add a cup of peeled and very thin sliced carrots to your stew. I like to serve my stew over homemade mashed potatoes or hot butteed white rice. Either makes a wonderful meal. Give it a try and see what you think.

If you want to you can make this stew with venison instead of beef.

16 Bean Soup Recipe

Sixteen bean soup is one of my favorite bean soups. I've been cooking this delicious soup for forty or more years and it really is delicious. The way I make it is almost like a minestrone soup.

I use mild Italian sausage in my soup but you can use hot Italian sausage if you like. I and my mom have worked on this 16 Bean Soup recipe for a number of years and over the years I've added to the soup and taken away from it while trying to come up with the perfect sixteen bean soup and I think I have what I consider the perfect sixteen bean soup. And I think you'll love it to once you give it a try.

For Your Sixteen Bean Soup You Will Need

1. One Package Sixteen Bean Soup.

2. One Pound Ham Cut Into Very Small Cubes.

3. One Large Purple Or Red Sweet Onion Chopped Fine.

4. One Heaping Tablespoon Minced Fresh Garlic

5. One Cup Celery Chopped Fine.

6. One Cup Bell Pepper Chopped Fine.

7. Four Cans Chicken Stock.

8. Two 303 Cans Diced Tomatoes.

9. Three Bay Leafs.

10. One Teaspoon Each Oregano, Ground Sea Salt, Ground Black Pepper.

When you cut up your vegetables and your ham cut them all up into very small pieces so you end up with all the veggies and the ham all about the same size.

You'll want to add all your ingredients to a large slow cooker or crock pot and turn it to high. Cook for about eight hours stirring your sixteen bean soup often about once a hour. Before you serve your sixteen bean soup you'll want to remove and discard the bay leafs.

If you need more liquid while the sixteen bean soup is cooking add chicken broth not water. This is very important so that you don't lose any of your flavor.

11/2 pints medium Louisiana oysters

1/2 cup shallots, diced

1 pint milk

2 Tbsp. butter

Salt & pepper to taste

Over a high heat, sauté shallots in butter. Stir in milk. Bring to boiling point, then lower heat. Ease in oysters. Simmer until oyster edges furl (3-5 minutes). Add salt & pepper. Serve with crackers.

Stewed Okra And Tomatoes





When I was a kid one of the things I looked forward to was homemade stewed okra and tomatoes. We usually had it over at my Grandma's house and it was served over homemade biscuits. You know it was over 50 years ago but I can still almost taste and smell how delicious those homemade stewed okra and tomatoes were over my Grandma's homemade biscuits.


Recipe For Stewed Okra And Tomatoes


1. One Pound Fresh Okra With The Ends Cut Off And Then Sliced Thin.


2. One 10 Ounce Rotel Tomatoes With Chilies.


3. One Eight Ounce Can Tomato Sauce.


4. One Half Teaspoon Ground Sea Salt.


5. One Level teaspoon Ground Black Pepper.


Wash your fresh okra and then cut the very ends of the okra pods off where it was connected to the plant. Then slice the okra up thin.


Put all the ingredients into a small stock pot and cook for about one hour on medium. You'll end up with wonderful tasting okra and tomatoes. If you want to you can buy about a dozen fresh ears of corn and slice the kernels off your corn and then scrape the corn cobs off into the pot. If you add the corn add 2 cups of chicken stock and cook down the corn, okra, and tomatoes until slightly thickened.


My Grandmother Hattie Propst and my Mom Virginia Walker made the corn, okra, and tomatoes and put up at least a hundred cans of it every year.


In the winter both fine cooks would fry out hamburger meat and fine chopped onions and then they would add the cooked and drained hamburger to a couple of quart jars of the corn, okra, and tomatoes and we would have the most delicious homemade soup over cornbread. Oh man it was so good.


Red Beans And Rice


I remember almost every Monday we would have red beans and rice. I've made red beans and rice all my life. I remember how good the red beans and rice my Grandma would make would taste.





Ingredients For Red Beans


Take a pound of red beans the night before and carefully check them for any small rocks or dirt. Then wash the beans well with cold running water while the beans are in a colander.


The next morning you can drain the water off your red beans and then add the beans and the below to a large slow cooker or crock pot.


1. One Cup Each Bell Pepper, Sweet Onion, And Celery all diced very fine.


2. One Pound Andouille Sausage Sliced Thin.


3.One Teaspoon Dried Thyme.


4. One Teaspoon Dried Oregano.


5. One Teaspoon Ground Cayenne Pepper.


6. One Teaspoon Ground Sea Salt.


7. One Teaspoon Dried Parsley Flakes.


Once all your ingredients are in the crock cover completely with water.


If you'll check your supermarket or grocery store probably carries Andouille Sausage. I know I can find it here in North Carolina. If you can't find it use Kielbasa Sausage.


Turn the crock pot or slow cooker on on high and cook about eight hours tightly covered. Keep a eye on the pot to make sure your beans don't cook dry. If they get too thick or too dry add more water. Also be sure to stir often.


My Grandmother always seved the red beans over hot buttered rice with cornmeal muffins on the side. She also often diced green onions up including the tops and served them on the side so people could add what they wanted to their serving of red beans and rice.


In the old south and New Orleans Monday's were usually wash day and the meal served that day was usually red beans and rice because the women could cook the red beans and rice while they did the wash. Often the bone and left over ham from Sunday's dinner was used in the red beans.
