Ham and Potato Chowder with Homemade Croutons Recipe

Ingredients For Your Ham And Potato Chowder

For the Chowder:

1. 1 cup diced, cooked ham

2. 1 onion, peeled and diced

3. 1 carrot, peeled and diced

4. 1 stalk celery, diced

5. 6 - 7 large potatoes, peeled and diced

6. 1 cup whole kernel corn

7. 1 teaspoon ground sea salt

8. 1 teaspoon black pepper

9. Leaves from 1 sprig of thyme

10. 1 teaspoon paprika

11. 2 tablespoons flour

12. 2 cups whole milk

For the Croutons:

1. 2 cups cubed ciabatta bread

2. Olive oil

3. Salt

4. Pepper

Cut your croutons into small 1 inch cubes. Toss with olive oil, salt, and pepper and toast in the oven at 350 degrees for about 12-15 minutes until golden brown. Turn them over about half way through the baking time so they will be brown on both sides.

Directions For Making The Soup:

Combine all of the soup ingredients into a large stock or soup pot - except for the flour and milk.

Simmer uncovered over medium heat until veggies are tender and cooked through - about thirty minutes. Now mix your flour and milk together. I do mine in the blender. Stir it into the soup and cook about another 10 minutes. The soup will be thickened. Serve your soup in bowls and top with a few of the homemade croutons in each bowl of soup.

The potatoes and the ham make this into one of the best soups you'll ever eat in your life. I buy a package of diced ham to make my soup with. The combination of the flavors of the ham and the potatoes just go together perfect. You can if you like sprinkle the top of your soup with fine chopped chives.
