The Best Tomato Soup You Will Ever Eat

Though Thomas Jefferson grew tomatoes in his own garden, few of his fellow Americans had ever seen one and many people feared tomatoes were poison. Today tomatoes are grown in every state and tomato soup is a favorite soup of many people.

Ingredients Needed For Your Tomato Soup

1. 7 Ripe Tomatoes, about 2 1/2 pounds.

2. 1 Large Sweet Onion, diced very fine.

3. 1 Medium Celery Stalk, diced very fine.

4. 1 Cup Fresh Basil, diced very fine.

5. 1 Bay Leaf.

6. 3 Whole Cloves.

7. Water.

8. 4 Tablespoons Butter Or Margarine.

9. 1/4 Cup All Purpose Plain Flour.

10. 1 Teaspoon Ground Sea Salt.

11. 1 Cup Half and Half.

12. 3 Teaspoons Sugar.

Fresh Basil To Garnish The Top Of Each Bowl Of Soup.

Instructions For Making Your Tomato Soup

With a small sharp knife, remove stem ends from tomatoes, cut into bite-sized chunks.

In a 3 quart sauce pan over medium heat, heat the tomatoes, onion, celery, basil, bay leaf, and cloves to boiling. Reduce heat to low. Cover and simmer until the vegetables are very tender, about 20 minutes. Stir the mixture occasionally to prevent any sticking. Add a little extra water if the mixture reduces too quickly.

Into a medium bowl press the mixture through a wire sieve, discard seeds, skin, and cloves.

Measure tomato puree. If necessary add enough water to make 4 cups tomato puree.

In same saucepan over low heat, melt the butter or margarine. Stir in flour and salt until well blended.

Stir in tomato puree, cook, stirring until thickened. Add half and half and sugar. Heat. Garnish the top of each bowl of soup with a fresh basil leaf. Serve with Grilled Homemade Pimento Cheese Sandwiches. See below.

You Say Tomato - I Say Superfood

The tomato has been called many things throughout history: Peruvian apple, love apple, and even, by Americans at least, a vegetable. Today, however, this lovely fruit is fast becoming known as Super-food!

While not able to leap tall buildings in a single bound, this super hero of the nutrition world is able to do some pretty amazing things. For example, some studies show the tomato may help decrease the risk of prostate cancer, as well as breast, lung and stomach cancers. And the Herald Sun reported in 2003 that the yellow jelly around the seeds have yet another benefit: They may stop blood cells from clumping together, which sometimes leads to strokes and heart attacks.

What is it about this little red fruit that makes it so amazing? Lycopene.

Okay, so the word lycopene doesn’t sound very appetizing, but this powerful antioxidant is the chemical in tomatoes that not only is responsible for it’s red color, but also responsible for its disease-fighting powers.

Just ask an Italian. Italian cooking relies very heavily on tomatoes and tomato products. And, some studies have suggested that this heavy intake of tomatoes by Italians has resulted in a lowering of cancer of the digestive tract.

Now, you’re probably thinking you have to consume tons and tons of fresh tomatoes to enjoy any health benefits. Not true. In one research study it was reported that people who ate tomatoes at least every other day had greater lung capacity. And, the tomatoes don’t even have to be fresh! Again, research shows that the lycopene in tomatoes is more easily absorbed by the body if processed into ketchup, sauce and paste. So, not only are tomatoes a super-food, they’re an easy super-food to include in your diet.

Of course, fresh tomatoes are still beneficial, and packed with wonderful nutrients (not to mention delicious). Just remember the one rule of fresh tomatoes: don’t put them in the refrigerator. The refrigerator destroys not only the flavor, it also destroys the nutrients.

So, go ahead, do something good for your health tonight. Have a tomato.

Crockpot Tomato Basil Parmesan Soup Recipe

This is some of the best tomato soup that you'll ever make and taste in your life. If you love tomato soup like I do then you need to try this Crockpot Tomato Basil Parmesan Soup.

Ingredients For Your Tomato Basil Parmesan Soup

1. 2 (14 oz) cans diced tomatos with juice

2. 1 cup finely diced celery

3. 1 cup finely diced carrots

4. 1 cup finely diced onions

5. 1 tsp dried oregano or 1 tbsp fresh oregano

6. 1 tbsp dried basil or 1/4 cup fresh basil

7. 4 cups chicken broth

8. 1 bay leaf

9. 1/2 cup flour

10.1 cup parmesan cheese

11.1/2 cup butter

12.2 cups half and half, warmed

13.1 tsp ground sea salt

14.1 tsp black pepper

Instructions For Making Your Tomato Basil Parmesan Soup

Add tomatoes, celery, carrots, chicken broth, onions, oregano, basil, and bay leaf to a large slow cooker.

Cover and cook on LOW for 5-7 hours, until flavors are blended and vegetables are soft.

About 30 minutes before serving prepare a roux. Melt butter over low heat in a skillet and add flour. Stir constantly with a whisk for 5-7 minutes. Slowly stir in 1 cup hot soup. Add another 3 cups and stir until smooth. Add all back into the slow cooker.

Stir and add the Parmesan cheese, warmed half and half, salt and pepper. Add additional basil and oregano if needed (the slow cooker does a number on spices and they get bland over time, so don't be afraid to always season to taste at the end).

Cover and cook on LOW for another 30 minutes or so until ready to serve.
