Texas State Fair Award Winning Chili

According to Frank Tolbert, who immortalized Texas Chili in A Bowl Of Red, the authentic, original recipe included beef, hot peppers, oregano, cumin, and garlic- but no beans. Beans are now considered to be acceptable, but "chili heads" are a contentious bunch. Their current controversy beans in the chili or served alongside.

In the deep chili purists pockets of Texas especially around San Antonio considered by many to be the birth place of chili you would still find people telling you that beans should be served on the side and never in the chili. But as I look around Texas I see more and more beans finding their way into the pot of chili.

In this recipe we have it so the beans can be added to the chili or served on the side. Either way I think you'll find the chili produced by this recipe to be oh so delicious.

Texas Chili Ingredients

1. 1 1/2 Pounds Boneless Beef Top Round Steak.

2. 1 Tablespoon Cooking Oil.

3. 1 Cup Fine Chopped Yellow Onion.

4. 2 Tablespoons Minced Fresh Garlic.

5. 2 Sixteen Ounce Cans Diced Tomatoes Pureed Smooth In Blender Or Food Processor.

6. 1 Four Ounce Can Diced Green Chilies.

7. 2 Tablespoons Chili Powder.

8. 1 Tablespoon Brown Sugar.

9. 2 Teaspoons Crushed Dry Oregano.

10. 1 Teaspoon Ground Cumin.

11. 1 Teaspoon Ground Sea Salt.

12. 3 Cups Hot Cooked Buttered Rice.

13. 4 Cups Cooked Pinto Beans.

14. Fine Diced Sweet Onion For Garnish.

15. Shredded Mexican Cheese For Garnish.

16. Sour Cream And Guacamole For Garnish.

Instructions For Making Your Texas State Fair Award Winning Chili

1. Start out by partially freezing your meat. Then thinly slice it against the grain into bite size pieces or cut it up into 1/2 inch cubes. In a Dutch Oven brown half your meat in hot oil. Remove the browned meat from the pan.

2.Brown remaining meat with the onion and garlic, adding more oil if necessary. Drain off the fat. Return all meat, onion, and garlic to the pan.

3. Stir in the tomatoes, beef broth, green chili peppers, chili powder, brown sugar, oregano, cumin and salt. Bring the mixture to a boil and then reduce the heat. Cover and heat on medium high heat for about a hour or until the meat is tender. You can if you want a thicker chili add a six ounce can of tomato paste near the end of the cooking time.

4. Serve with your sides over squares of corn bread in bowls.

Double Cheese Chili Recipe With A Surprise Ending

This Delicious Double Cheese Chili has a surprise ending at the bottom of every bowl and that is delicious melted cheese. If your looking for a chili that kids will love then this is it. Its also a less spicy chili than most other chili's.

Ingredients Needed For Your Chili

1. 1 lb. ground beef.

2. 1 small onion, chopped.

3. 1/2 cup chopped green peppers.

4. 1 can (15 oz.) kidney beans, rinsed.

5. 1 can (14-1/2 oz.) diced tomatoes, not drained.

6. 1 can (8 oz.) tomato sauce.

7. 1 Tbsp. chili powder.

8. 1-1/2 cups Shredded Sharp Cheddar Cheese, divided.

Instructions For Making The Chili

BROWN meat in large skillet on medium heat; drain. Add onions and peppers; cook and stir 5 min. or until crisp-tender.

ADD next 4 ingredients; mix well. Cover. Simmer on low heat 30 min., stirring occasionally.

SPRINKLE 3 Tbsp. cheese onto bottom of each of 6 soup bowls; top with chili and remaining cheese.

How To Change The Chili Up A Bit If You Want To

Substitute ground turkey for the ground beef.

Garnish each serving with a dollop of Sour Cream and a light sprinkling of chopped fresh parsley or cilantro.Some people like to add a dollop of guacamole. I like to add both guacamole and sour cream.

For a spicier chili, add 1 small chopped jalapeno pepper or a few drops of hot pepper sauce.

Chicken and White Bean Chili

Roasted green chilies add spice to this do-ahead dish, which happens to be a great way to use up leftover chicken.

Ingredients

1 pound dried small white beans

8 fresh Green Chilies (about 1 pound)

1/4 cup (1/2 stick) butter

2 large onions, chopped

1/3 cup all purpose flour

4 cups low-salt chicken broth

3 cups half and half

4 cups shredded cooked chicken

1 tablespoon chili powder

1 tablespoon hot pepper sauce

1 tablespoon ground cumin

2 teaspoons salt

1/2 teaspoon white pepper

1 1/2 cups grated Monterrey Jack cheese (about 6 ounces)

1 cup sour cream

Chopped fresh cilantro

Purchased tomatillo or green chili salsa

Preparation

Place beans in heavy large pot with enough cold water to cover by at least 3 inches. Let stand overnight.

Char chilies over gas flame or in broiler until blackened on all sides. Enclose in paper bag; let stand 10 minutes. Peel, seed, and chop chilies. Set aside.

Drain beans. Return to pot. Add enough cold water to pot to cover beans by 3 inches. Simmer until beans are almost tender, stirring occasionally, about 1 hour. Drain well.

Melt butter in clean heavy large pot over medium heat. Add onions and sauté until tender, about 15 minutes. Add flour and stir 5 minutes (do not brown). Gradually whisk in chicken broth and half and half. Simmer gently until thickened, about 10 minutes. Add reserved white beans and roasted chilies, shredded chicken, and next 5 ingredients. Simmer gently to blend flavors, about 20 minutes. (Chili can be made 1 day ahead. Chill until cold, then cover and keep chilled. Rewarm before continuing.)

Add grated cheese and sour cream to chili; stir just until chili is heated through and cheese melts (do not boil). Ladle chili into bowls and garnish with cilantro and green salsa. Serve.

Johnny Cash Chili Recipe

Johnny Cash Chili is a unique recipe straight from the Man in Black himself. Honor the memory of this great musician by cooking the chili that he once enjoyed. The instructions include personal notes from John Carter Cash, Johnny Cash's only child, with his own comments about how his father would cook this chili. Ingredients

2 pounds ground venison or ground beef

1 pound venison steaks or sirloin

2 large sweet onions

3 cloves garlic

2 tablespoons canola oil

3 (16-ounce) cans whole tomatoes

2 large green bell peppers

5 jalapeno peppers, diced, to taste

1 habanero pepper, to taste

2 packets McCormick mild chili seasoning

salt and black pepper

1/2 cup chili powder (New Mexico chili powder, if available)

1/3 cup cumin

1 tablespoon sage

1 1/2 teaspoon oregano

1 tablespoon cayenne pepper

2 (15-ounce) cans black beans

2 (15-ounce) cans pinto beans

2 (15-ounce) cans kidney beans

1 (15-ounce) can chili beans

1 (12-ounce) bottle beer

1/4 cup sugar

1/4 cup self-rising cornmeal, about a handful

Instructions

Chop the steak into medium pieces. Finely chop the onion and garlic.

In a stock pot, heat the oil over medium-high heat. Brown the steak in the oil in batches, draining off some of the fat if necessary. Remove from the heat and set aside. In a skillet, brown the ground meat over medium-high heat. Drain off the fat and set aside.

With the oil remaining in the pot, brown half the onions and garlic over medium heat until they are caramelized. Now add the well-drained ground beef and steak. Stir and heat it all up.

Add the tomatoes, bell peppers, hot peppers (if using), and the remainder of the onions and garlic. Heat to a brisk simmer, stirring often.

Now it's time for the spices. Dad would normally put in the McCormick chili packets, followed by the salt and black pepper, chili powder, cumin, sage, oregano, and cayenne pepper. This is the time to begin tasting your chili.

Once the taste is to your liking, drain the cans of beans and add to the mixture. Now taste again, as you will likely want to add some more spices because the beans mellow their flavor.

Once the chili tastes right, pour in the bottle of beer. Stir well. Cover and simmer for at least 30 minutes, stirring occasionally.

Add sugar to taste, but be careful not to use too much. Chili becomes something else entirely if too sweet. Simmer, covered, for at least another 30 minutes, making sure to stir so it does not burn.

Now grab that handful of cornmeal, uncover the chili, and stir it in.

Three Ingredient Chili Dip

Ingredients For Your 3 Ingredient Chili Dip

1. 2 Can's Chili With Or With Out Beans.

2. 2 Cups Shredded Cheddar Cheese.

3. 2 Eight Oz. Packages Cream Cheese.

Have your cheese and cream cheese at room temp. and then add all three ingredients to the food processor and puree smooth.

This dip is great as seen in the photo above with the dip poured over Nacho Chips. You can sprinkle more shredded cheddar cheese on top and melt under a broiler for a couple of minutes. Just melt it but don't burn it.

You can sprinkle the top with sliced or diced jalapenos, sour cream and guacamole and you'll have a wonderful appetizer that everyone will really enjoy

Slow Cooker Beef ’n Beer Chili Recipe

Ingredients For Your Slow Cooker Beef ’n Beer Chili

1. 1 lb beef chuck roast, trimmed of fat, cut into 3/4-inch pieces

2. 2 tablespoons all-purpose flour

3. 1 tablespoon vegetable oil

4. 1 bottle (12 oz) dark beer, room temperature

5. 1 large onion, chopped (1 cup)

6. 1 tablespoon minced fresh garlic

7. 2 cans (14.5 oz each) diced tomatoes, undrained

8. 1 can (16 oz) pinto beans, drained, rinsed

9. 1 can (15 oz) red kidney beans, drained, rinsed

10. 2 tablespoons tomato paste

11. 2 tablespoons chili powder

12. 1 tablespoon unsweetened baking cocoa

13. 1 teaspoon ground sea salt

14. 1 cup shredded sharp Cheddar cheese (4 oz)

Directions For Making Your Chili

1. Spray 5- to 6-quart slow cooker with cooking spray. In large resealable food-storage plastic bag, place beef and flour; seal bag and shake to coat. In 12-inch skillet, heat oil over medium-high heat. Cook beef in oil, stirring occasionally, until browned on all sides. Place beef in slow cooker.

2. Add beer to skillet, stirring and scraping to loosen brown particles. Cook 1 minute. Pour over beef in slow cooker. Add remaining ingredients except cheese.

3. Cover; cook on Low heat setting 8 hours. Sprinkle individual servings with cheese.

This chili is wonderful served over a square of corn bread in a large soup bowl. This is a really delicious chili that everyone loves.

Cornbread Waffles With Homemade Chili

Here we have what could become a holiday tradition at your house. If you have a simple waffle iron at your house you should make this delicious recipe. What you do is make up a box of Jiffy Corn Bread Mix by the package directions and then spray your waffle iron with vegetable cooking spray and cook corn meal waffles. Yes the corn meal waffles really are that easy to make and they presentation on the plate is just beautiful. Just cook your cornmeal waffles until they are golden brown. I like to cook mine until they are real golden brown and crisp. If you get them that way and put your homemade chili on top of them right then and top them with the sides you'll find that you have one of the most delicious meals your ever going to have in your life.

Christmas Chili Recipe

1 pound lean ground beef

1 large onion, chopped very fine

In a large pot, brown together until meat is brown and onion is tender:

Drain off fat.

Add The Below Ingredients:

2 15½ ounce cans dark red kidney beans, undrained

2 15½ ounce cans light red kidney beans, undrained

1 28 ounce can peeled Italian-style tomatoes, cut up

1 14½ ounce can stewed tomatoes

2 4 ounce cans diced green chili peppers

1 14-15 ounce can whole kernel corn

1/4 cup chili powder

1 teaspoon garlic powder

1 teaspoon dried oregano, crushed

1 teaspoon ground red pepper (use half that amount if you do not like your chili spicy hot)

dash of black pepper

Bring to boiling and then reduce heat. Slowly simmer, uncovered, 2 to 3 hours, stirring occasionally. Makes 12 (1 cup) servings.

I usually prepare rice also and serve a ladle of chili over the rice in a deep bowl. Then I sprinkle sharp cheddar cheese over the top. A spoon of sour cream is delicious, also.

The flavor of this chili becomes more delicious after freezing and it certainly makes enough for left-overs.

Crockpot Cincinnati Style Chili

Here we have Crockpot Cincinnati Style Chili made in the crock pot. In case you don't know in Cincinatti the chili is often served either over spaghetti noodles or with spaghetti noodles in it and it really is oh so delicious.

Ingredients For The Crockpot Cincinnati Chili

1. Two Pound Ground Beef.

2. One Twenty Eight Ounce Can Italian Style Diced Tomatoes.

3. One Pound Fresh Button Mushrooms Diced Fine.

4. One Large Purple Or Red Sweet Onion Diced Finely.

5. One Can Rotel Tomatoes With Chilies.

6. Two Tablespoons Apple Cider Vinegar.

7. One Tablespoon Chili Powder.

8. One Teaspoon Ground Cumin.

9. One Teaspoon Ground Sea Salt.

10. One Level Teaspoon Red Pepper Flakes.

11. One Teaspoon Cinnamon.

12. One Six Oz. Can Tomato Paste.

Instructions For Making Your Cincinnati Style Chili

Start off by cooking your hamburger and onions together until the ground beef is just done and brown. You want the onions to be just soft and not browned. Now drain the ground beef and onions well.

Add everything into a large crock pot or slow cooker and cook about six hours on high and then turn it down so it just keeps the chili warm.

Cook a pound of spaghetti noodles by the package directions and then drain well. Put a serving in the bottom of a large soup bowl and then pour a large ladle of the Cincinnati Style Chili in on top of the noodles. Top with shredded Mexican cheese and fine diced green onions including the tops. You won't find a better recipe for Cincinnati Style Chili anywhere else. This is the way to make it if you want the best ever. Try it and I think you'll agree its the best damn Cincinnati Chili in the world. Yes the best ever.

Four Bean Chili For A Crowd

Incredibly easy to make, this chili also provides a master recipe for any type of quick chili you wish to pull off at the last minute. You just need four cans of your favorite beans. Then, toss in whatever cooked meat you have on hand. Shredded chicken, diced pork, or pieces of last night's steak all work well. Or if you want to forgo the meat, add a cup and a half of your favorite chopped raw veggies, zucchini, eggplant, or carrots, for example. Serve the chili with hot buttered corn bread, or crusty garlic bread from the grocer's freezer.

Ingredients Needed For Your Chili

4 Cans (15 OZ. each ) beans of your choice, black bean, pinto, white beans, or kidney beans in their liquid.

3 Cans Rotel Tomatoes with Green Chilies.

1 1/2 Cups Shredded Cooked Chicken, Pork, Or Beef.

1 Teaspoon Ground Cumin.

1 Tablespoon Chili Powder.

1 Bay Leaf.

1 Tablespoon Hot Sauce.

Place the beans and tomatoes with their liquid, chicken, cumin, bay leaf, and hot pepper sauce in a stock pot.

Cook, stirring until the chili comes to a boil, 4 - 5 minutes, then reduce the heat to low and cover the pot. Let the chili simmer until it thickens and the flavors come together. You'll need to cook on low for at least a hour for it to come together great.

To turn this chili into a fiesta, ladle it into shallow bowls and set out all sorts of toppings like cubes of avacado, sour cream, guacamole, cilantro sprigs, tortilla chips, and wedges of lime. You can of course add other things if you like. Its your chili after all.

Here the beans go into the pot with their liquid. The starch in the liquid helps the chili thicken quickly.

There is a plethora of Mexican-style diced tomatoes out there, and they are a smart addition to your pantry. Not just for this chili. You can add them to other quick soups or main dishes. I hope you get to make this chili real soon and I hope you enjoy it.

The Best Texas Chili Recipe Ever

If your looking to make a really wonderful chili for your family and friends then you just found it. Because let me tell you. This is truly one of the best chili's you'll ever find in your life.

Ingredients For Your Texas Chili

1. 4 Tablespoons Vegetable Oil Divided

2. 2 Large Sweet Onions Diced Fine

3. 1 Heaping Tablespoon Fresh Minced Garlic.

4. 2 Pounds Boneless Sirloin Cut In One Inch Cubes

5. 1 Pound Ground Beef

6. 1 15 1/2 Oz to 19 Oz Can Red Kidney Beans Washed And Drained

7. 1/3 Cup Hot Sauce

8. 1/4 Cup Chili Powder

9. 2 Tablespoons Ground Cumin

10. 1 Tablespoon Dried Oregano Leaves

11. One 12 OZ. Beer

12. One Teaspoon Each Ground Sea Salt And Ground Black Pepper

You can use 12 oz. Apple Juice in place of the beer if you need to.

Instructions For Making Your Chili

Heat 1 tablespoon of the veg oil in a saucepan. Add the onions and garlic and cook until tender but not brown. Just get them done. Pour into a large stock pot.

Heat remaining oil in sauce pan. Brown your meat in batches and drain it very well before adding it to the stock pot.

Be sure to drain your meat very well.

Add the remaining ingredients to the stock pot and let it cook over medium heat until it gets some what thicker. You want it to cook down and get as thick as possible.

Now add 1 six ounce can tomato sauce to the ingredients in the stock pot.

You can serve your Texas Chili over a square of homemade cornbread in a large soup bowl. Off diced green onions, shredded cheddar cheese, chopped cilantro, guacamole, and sour cream on the side for a delightfully delicious tasty treat.

This really is one of the best chili recipes you'll ever make and taste in your life. Its so very delicious.
