Avocado And Corn Salsa Recipe

A salsa this simple lives or dies by the quality of the ingredients. Ripe avocados, luscious tomatoes, and a sweet, crunchy ear of corn. Most of my corn salsa recipes call for grilled corn. This one features the succulent crunch of raw corn to reinforce the sweetness of the fresh avocado.

Ingredients For Your Avocado And Corn Salsa

1. 1 Ripe Avocado, cut into 1/4 inch small pieces.

2. 3 Tablespoons Fresh Lime Juice.

3. 1 Large Ripe Tomato cut into very small diced up pieces.

4. 1 Large Ear Sweet Corn, shucked, silks removed, and cut off the cob.

5. 1 Small Bunch Green Onions diced up fine including tops.

6. 2 Jalapenos seeded and minced up very fine.

7. Hand full of Cilantro diced up very fine.

8. 1 Teaspoon Ground Sea Salt.

9. 1 Teaspoon Ground Black Pepper.

Instructions

Prepare all your ingredients and then mix together well in a plastic container you have a lid for. Set in the refrigerator to chill very well before you use.

Be sure to cut the top off the tomato and dice it well before adding it to the other ingredients.

You'll want to dice your small bunch of green onions up very well including the green tops. Be sure that every ingredient gets very well diced up. This is very important. Its also important to make sure your avocado is ripe. Be careful working with your jalapenos to make sure not to get any of their juices on your face or in your eyes. I wear rubber kitchen gloves when working with jalapenos and other hot peppers.

Avocado Dip

1. 1 Tablespoon Fresh Minced Garlic.

2. 2 Tablespoons Fresh Washed And Very Well Chopped Cilantro.

3. 1 Tablespoon Tarragon Vinegar.

4. 1 Teaspoon Dried Crushed Tarragon.

5. 6 Anchovy Fillets.

6. 1/4 Cup Tarragon Shallot Mustard.

7. 1 Cup Mayonnaise.

8. 2 Large Ripe Peeled Avocados Seeded And Mashed Very Well.

9. 4 Tablespoons Half And Half.

10. Ground Sea Salt And Pepper To Taste.

Instructions

Combine all the ingredients in a food processor and puree smooth. Transfer to a plastic container with lid and chill very well before serving. This is wonderful with carrot and celery sticks or chips of any kind.

How To Make Delicious Homemade Salsa

You can buy all the salsa you want to out of the grocery store but your never going to purchase anything as good as a good delicious homemade salsa. I know you'll see recipes calling for you to use canned tomatoes but I never do. I purchase the freshest tomatoes I can from the grocery store and chop them for my homemade salsa. When I can find them I use fresh plum tomatoes or cherry tomatoes because I think they have a lot more flavor especially in the winter months.

You need to use green onions including the tops, fresh cilantro, and fresh minced garlic.I use the little four ounce cans of green chili's but I also use a few fresh jalapeno peppers. You should keep in mind that the more fresh jalapeno peppers you use the hotter your homemade salsa will be.

Ingredients Needed For Your Homemade Salsa

1. Two Cups Fresh Fine Diced Tomatoes.

2. One Cup Fresh Green Onions Including Tops Diced Fine.

3. One Bunch Fresh Cilantro Diced Fine.

4. Two - Four Jalapenos With Stems Removed And Diced Fine.

5. One Tablespoon Minced Fresh Garlic.

6. One Four Ounce Can Green Chili's.

7. One Level Teaspoon Ground Sea Salt.

8. One Teaspoon Fresh Lime Juice.

9. One Teaspoon Fresh Grated Lime Zest.

Instructions For Making Your Homemade Salsa

You want to chop your tomatoes, jalapenos, and green onions including the tops very fine. Have everything about the same size and your salsa will turn out perfect.

Mix everything together in a large plastic container with a lid so you can put the prepared salsa in the refrigerator for at least 12 hours before you serve or use your homemade salsa.

Salsa usually refers to a Mexican sauce made from tomatoes flavored with cilantro, chilies, and onions. But you'll find that some Chefs have started thinking outside the box and they are making salsa out of mango, fruits, vegetables, and even beans. If you can come up with a flavor combination you like there's no reason you can't call it salsa. So why not do some out of the box thinking and see what you can come up with. I think you'll find that sea salt will give you a lot more flavor in almost any salsa recipe.

Delicious Homemade Salsa




Here is one of the best and easiest salsa's that you'll ever make. The really great thing is that you can make this salsa now to serve this coming winter when garden fresh tomatoes aren't available. And this salsa tastes just wonderful.


Easy Food Processor Salsa


Ingredients


1. Four Cups Peeled Diced Fresh Tomatoes.
2. 1- 10 oz can original Rotel Tomatoes and Chili's.
3. One Medium Sweet Onion Diced.
4. Two Tablespoons Minced Fresh Garlic.
5. Two Jalapeno's Seeded And Diced.
6. One Tablespoon Honey.
7. One Teaspoon Ground Sea Salt.
8. One Teaspoon Ground Cumin.
9. Small Handful Cilantro Washed.
10. Juice Of Two Limes.
11. Zest Of Two Limes.





Put all your ingredients into your food processor and puree the salsa smooth. And nothing is written in stone in this recipe. If you want to leave something out or add something else feel free to do so.


Canning Salsa


If your going to make enough of this salsa to can you'll want to heat your salsa to almost boiling and then set off the heat. Boil your jars, rings, and lids and then fill your half pint or pint jars with the salsa and leave about one half inch at the top of each jar. After you fill the jars and put the lids and rings on boil your jars of salsa for 10 minutes and then allow the jars to cool on a towel before you put them away. You should hear the jars pop as they seal. And then be sure to label your jars and date them so you know what you have.
